The Best Strawberries for Strawberry Butter

What makes this butter delicious is the fresh berries. To make a creamy spread, either put them in a food processor or smash them with a fork. The best strawberries for the task are ultra-ripe.

Look for the reddest, juiciest, and most aromatic strawberries you can find. The riper they are, the stronger the strawberry flavor will be. Plus, they’ll be easier to process or mash, and the results will be creamier. 🍓

Recipe Ingredients

  1. Strawberries – There’s really no substitute for fresh strawberries in this recipe. Wash, hull, and dice them to prep them for the butter. If you use frozen strawberries, let them thaw and drain off the excess juice before mashing them for the butter.
  2. Butter – Unsalted butter at room temperature easily transforms into a sweet spread. Its rich flavor complements the sweet strawberries beautifully.
  3. Sweetener – To make the butter perfectly sweet, you can add honey or powdered sugar. It’s your call.

How to Make Strawberry Butter

Puree the fruit and mix it all together

Mix the Ingredients

  • Puree – Add the strawberries to a small food processor and puree to the desired texture, or use a fork and mash them by hand. (Photos 1-2)
  • Combine – Place the butter, sugar, and ½ of the pureed strawberries in a medium bowl. Mix all the ingredients with a hand-held mixer until thoroughly blended. (Photo 3)
  • Taste Test – Adjust your strawberry butter (if needed) to the desired texture with more powdered sugar or pureed strawberries. (If using honey, adjust the quantity to taste as it is sweeter than powdered sugar.) (Photo 4)

Chill and Serve

  • Store – Transfer the strawberry butter to a serving dish or mold.
  • Chill – Refrigerate it for at least an hour so the flavors meld and the butter firms up.
  • Serve – Let it soften at room temperature for a few minutes before serving.

Recipe Variations

  1. Fast hack. In a pinch, you can use a combination of butter and strawberry jam for a quick version of strawberry butter.
  2. Whipped butter. Add a tablespoon or two of water and whip the ingredients with your hand mixture for a few extra minutes. Whipped butter will spread well, even when chilled.
  3. Fruit butter. Swap out strawberries with blueberries, blackberries, or raspberries. Or you can use a combination for incredible fruit butter. 🫐
  4. Strawberry honey butter. For a special flavor twist, use orange blossom or manuka honey to sweeten your butter.

Tips and Tricks

  1. If using honey, start with a smaller amount and work up to the desired sweetness because it’s sweeter than powdered sugar. 🍯
  2. For flavor enhancement, add a small pinch of salt, especially if using unsalted butter.
  3. You can adjust the texture to be smooth or chunky based on your preference for pureed or mashed strawberries.

Make-Ahead Instructions

You can make this strawberry butter up to a week ahead of time. Just chill the butter in an airtight container until ready to serve.
