How to Perfectly Cook Marinated Pork Chops

Pork chops are excellent, as long as you don’t overcook them! Remember that you want the chops to reach an internal temp of 145℉ (65℃). A meat thermometer will measure the temperature if you aren’t yet a pro at eyeing doneness. Remove the chops from the pan as soon as they’ve cooked through. 

Another key to perfect pork chops? Let them rest for about 10 minutes before slicing them. That allows the juices to distribute evenly throughout the meat and gives you an extra juicy chop.😅

Recipe Ingredients

  1. Pork Chops – Bone-in pork chops of your preferred thickness will work fine here. Just give them a little extra time in the pan if you love the super thick variety. 
  2. Pork Chop Marinade Ingredients – Fresh minced rosemary and garlic are the power players here (obvs), but you’ll also need smoked paprika, cayenne powder, soy sauce, white pepper, a little oil, and some S&P to round out the marinade. 
  3. Mango Salsa – For this delightful salsa, round up some mango, avocado, red onion, jalapeno, lime, oil, salt, and pepper. 😋

How to Marinate Pork Chops With Rosemary and Garlic

  • Marinade – Blend the rosemary, garlic, paprika, cayenne, and soy sauce in a food processor or with a mortar and pestle.
  • Marinate – Lightly salt the pork chops, then pour the garlic rosemary marinade over them. Cover them and refrigerate for at least 30 minutes or until you’re ready to cook. (Photos 1-2)
  • Mango Salsa – In a medium bowl, mix the mango, jalapenos, avocado, onions, lime juice, olive oil, salt, and pepper. (Photo 3)
  • Cook – Heat a cast iron skillet or grill pan until hot. Cook the pork chops, flipping once, until they’ve browned and cooked to the desired doneness. Or grill them on high heat for 3-5 minutes on each side, depending on their thickness. In any case, the chops are ready when the internal temperature reaches 145℉ (65℃). (Photo 4)
  • Rest – Let the chops rest for about 10 minutes before topping them with the mango salsa and serving. Enjoy!

Recipe Variations

  1. Customize the marinade. You can add any fresh or dried spices or herbs you love and leave out anything that doesn’t float your boat. Lemon and garlic are amazing.
  2. Smoked or grilled pork chops. You could also cook these pork chops on the grill or in a smoker. Both ways taste amazing. 🤤
  3. Swap out the salsa. If you aren’t feeling the salsa, swap it out for herb-loaded chimichurri instead. Or serve these marinated pork chops naked. It’s totally up to you!

  1. To get a lovely sear, always preheat your skillet before you put the chops in the pan.
  2. Thirty minutes will do for marinating these chops, but for a flavor boost (and possibly a little time savings) try marinating them overnight. 
  3. To avoid undercooking or overcooking the meat, use a meat thermometer. It’s the easiest way to get perfectly juicy pork chops every time. 

Make-Ahead Instructions

You can marinate the pork chops and make the salsa the night before you plan to serve this dish. Store them both in the fridge in separate airtight containers. The next day, remove them from the fridge, cook the pork chops, and serve. 

Serving and Storage Instructions 

Refrigerate leftover pork chops and salsa separately in airtight containers for 3-5 days. To reheat the pork chops, pop them in the microwave or air fryer. You could also reheat them back in the skillet or in your oven. Just keep the temperature fairly low and remove them as soon as they are heated through to avoid drying them out.

Instructions

Pork Chops

  • In a food processor or mortar and pestle, finely chop the rosemary. Mix the rosemary, garlic, paprika, cayenne, soy sauce, and white pepper until thoroughly combined.

  • Lightly salt pork the pork chops, then marinate them in the rosemary garlic mixture.

  • Refrigerate the marinating pork chops until ready to cook. They taste best when marinated for at least 30 minutes, but you can marinate them for 8 hours up to 2-3 days.

  • Heat a cast iron or grill pan until hot. Sear pork chops, flipping once, until browned and cooked to the desired doneness. Or grill the steaks on high heat for 3-5 minutes on each side, depending on the size. The internal temperature should read between 145℉ (62℃) and 160℉ (70℃).

Mango Salsa

  • Combine the mango, jalapenos, avocado, onions, lime juice, olive oil, salt, and pepper in a medium bowl. Serve with the pork chops, and enjoy.
