About Foxtail Millets

Foxtail millets are tiny grains known for its nutritive value.  It is known as Kangni in Hindi, Navane in Kannada, Thinai in Tamil.  It is known for its high protein content making it a valuable source of plant based protein for vegetarians and vegans. It is gluten free and is rich in iron, calcium and magnesium. It is used to make porridge, idli, dosa, desserts etc.

Foxtail Millet Pulao is a flavourful dish made using foxtail millets, veggies and spices.  Foxtail millet pulao loaded with vegetables is a nutritious meal option. Preparing foxtail millets pulao is quite simple. Foxtail millets are washed and soaked for 6 to 7 hours. The millets are then cooked with veggies and spices. This pulao is made without any oil or refined ingredients thus making this dish super healthy. This pulao pairs well with curds/ raita.

List of ingredients to make Foxtail Millets Pulao

Foxtail Millets
Spices : cumin seeds, bay leaf, cinnamon, green cardamom, cloves, turmeric powder, red chilli powder, garam masala, cumin coriander powder, green chilly
Vegetables : onion, tomato, green peas, carrot
Other ingredients : salt, ginger garlic paste and chopped coriander leaves

Step-wise recipe to make Foxtail Millets Pulao

Wash and soak foxtail millets in water for 6 to 7 hours. After 6 hours, drain the water and keep soaked millets aside.

Heat a pan, Add cumin seeds. When the seeds start crackling, add bay leaf, cloves, cinnamon and green cardamom, Saute for few seconds.

Add onion slices, Sprinkle a pinch of salt and saute till onions turn soft.

Add chopped tomato, chopped green chilly, ginger garlic paste and saute.

Add green peas and chopped carrot. Mix well.

Add turmeric powder, red chilly powder, cumin coriander powder, garam masala and salt. Mix well.

Add soaked millets.

Add water. Cook on high heat till the water comes to a roaring boil.

Reduce  the heat, cover the pan and cook for 10 to 12 minutes.

Garnish with chopped coriander leaves. Serve hot with curds/ raita.

  • ½ cup foxtail millets
  • 1 tsp cumin seeds
  • 1 bay leaf
  • a small piece of cinnamon
  • 2 cloves
  • 1 green cardamom
  • 1 onion, thinly sliced
  • 1 small tomato, chopped
  • 1 tbsp ginger garlic paste
  • 1 green chilly, chopped
  • ½ cup fresh green peas
  • ½ cup chopped carrot
  • ½ tsp turmeric powder
  • ½ tsp red chilly powder
  • ½ tsp cumin coriander powder
  • ½ tsp garam masala
  • salt to taste
  • 1 ¼ cup water
  • chopped coriander leaves for garnishing
